Ingredients
  

Cheeses

  • 12 ounces evaporated milk 1 can
  • ¾ pound white american cheese
  • 4 ounces freshly shredded mozzarella cheese

Spices and Seasonings

  • 1 tablespoon cornstarch
  • 2 tablespoons chopped canned jalapenos or chopped green chiles
  • 1 teaspoon chili powder or cumin
  • ½ teaspoon ground nutmeg optional
  • 1 teaspoon red pepper flakes
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Garnishes

  • chopped fresh cilantro
  • chopped tomatoes
  • jalapenos for garnish

Instructions
 

Cooking Instructions

  • Heat evaporated milk over medium-high heat in a small saucepan. Stir in the cornstarch and whisk to combine.
  • Once simmering, reduce heat to low.
  • Stir in the cheese in batches, starting with the white american cheese, whisking constantly while the cheese melts.
  • Once done with the white American cheese, add in the shredded Mozzarella, whisking constantly.
  • Once all the cheese is melted, stir in the jalapenos, chili powder, nutmeg, red pepper, salt and pepper.
  • (Optional) To brown the queso, pour it into a skillet and broil for 3-4 minutes.
  • Top with cilantro, tomatoes, and more jalapenos if desired.
  • Serve with tortilla chips and enjoy!

Notes

Some readers prefer to skip cumin and nutmeg, adjust spices as preferred. Keep the heat low to prevent grainy cheese. Use freshly shredded cheese for best texture. Queso thickens as it cools; keep it warm and stir often. I recommend mixing in cooked chorizo, taco meat, or chicken if desired. Not recommended to freeze, as it will become grainy when thawed.
