Ingredients
  

  • 1 pound ground chicken or turkey
  • ¼ cup finely diced onion
  • ½ cup chopped cilantro
  • 2 teaspoons grated ginger
  • 1 teaspoon lemongrass paste
  • ¼ cup breadcrumbs
  • 2 cloves garlic minced very finely
  • 1 teaspoon salt
  • ½ teaspoon cracked pepper
  • 2 tablespoons vegetable oil

Instructions
 

  • Preheat the oven to 400°F.
  • Combine ground chicken, finely diced onion, chopped cilantro, grated ginger, lemongrass paste, breadcrumbs, minced garlic, salt, and cracked pepper in a bowl.
  • Use a cookie scoop, and roll into small balls in your hands.
  • In a medium skillet, heat vegetable oil over medium heat. Add meatballs and brown.
  • Bake in the oven for 8-12 minutes, until fully cooked.
  • Devour.

Notes

Freezing raw meatballs: Place on a baking sheet, cover loosely with plastic wrap and freeze several hours. To eat, bake on a baking sheet at 400°F for 10-15 minutes. Freezing cooked meatballs: Cool completely, freeze on a baking sheet, and store in a freezer-safe plastic bag. Heat in the microwave until hot.
