- 1 ½ to 2 pounds boneless, skinless chicken breasts or thighs
- 1 large yellow onion diced
- 2 stalks celery diced
- 2 4-ounce cans diced green chili peppers preferably fire-roasted, drained
- 3 cloves garlic minced
- 2 teaspoons ground cumin
- 1 ½ teaspoons kosher salt
- ½ teaspoon ground coriander
- ½ teaspoon dried oregano
- 1 bay leaf
- 4 cups low-sodium chicken broth
- 1 15-ounce can cannellini or navy beans drained and rinsed
- 1 cup frozen corn kernels

Combine chicken, onion, celery, green chili peppers, garlic, cumin, salt, coriander, oregano, and bay leaf in a slow cooker. Pour in chicken broth and stir to cover the chicken and vegetables.
Cover and cook on HIGH for 4 hours or LOW for 6 to 8 hours.
About 30 minutes before cooking finishes, stir in the beans and corn. Adjust seasoning if needed, cover and finish cooking.
Transfer chicken to a plate and shred. Stir chicken back into the chili and remove bay leaf. Serve with cheese, lime wedges, cilantro, and sour cream.
