Ingredients
  

Chicken and Vegetables

  • 1.5 to 2 pounds boneless, skinless chicken breasts, thighs, or a mix
  • 1 large yellow onion, diced
  • 2 stalks celery, diced
  • 2 cans (4-ounce) diced green chili peppers, preferably fire-roasted, drained
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon dried oregano
  • 1 leaf bay leaf
  • 4 cups low-sodium chicken broth
  • 1 can (15-ounce) cannellini or navy beans, drained and rinsed
  • 1 cup frozen corn kernels

For Serving

  • shredded Monterey jack cheese
  • lime wedges
  • chopped cilantro
  • sour cream
  • hot sauce

Instructions
 

Cooking Instructions

  • Combine chicken, onion, celery, chili peppers, garlic, cumin, salt, coriander, oregano, and bay leaf in a slow cooker. Stir and add broth, covering chicken and vegetables.
  • Cover and cook on HIGH for 4 hours or on LOW for 6 to 8 hours.
  • About 30 minutes before cooking ends, stir in beans and corn. Adjust salt if necessary.
  • Shred chicken and return it to the chili. Discard bay leaf and serve with cheese, lime, cilantro, and sour cream.

Notes

This recipe can be easily adjusted for spice level by adding more or fewer chili peppers or seasoning.
