Ingredients
  

Sesame Crusted Blue Cod

  • 4 fillets Blue Cod wild-caught
  • 28 g White Sesame Seeds
  • 14 g Black Sesame Seeds
  • 2 g Ground Ginger
  • 20 g Kosher Salt
  • 14 g White Peppercorns ground
  • 30 mL Vegetable Oil

Crispy Rainbow Noodle Bowl

  • 225 g Soba Noodles
  • 1 teaspoon Vegetable Oil
  • 55 g Wonton Wrapper thawed
  • 225 g Shelled Edamame
  • 110 g Snow Peas
  • 110 g Rainbow Carrots peeled and cut into ribbons
  • 28 g Scallions sliced

Miso-Teriyaki Sauce

  • 60 mL Soy Sauce
  • 60 mL Miso
  • 30 mL Vegetable Oil
  • 30 mL Mirin
  • 7 g Ginger minced
  • 7 g Garlic minced
  • 14 g Light Brown Sugar loosely packed
  • 14 g Honey

Instructions
 

Preparation

  • Prepare the ingredients by slicing the scallions, peeling the carrots into ribbons, and thawing the wonton wrappers.
  • In a bowl, combine the white sesame seeds, black sesame seeds, ground ginger, kosher salt, and ground white peppercorns. Press the blue cod fillets into the sesame mixture to coat them.
  • Heat vegetable oil in a frying pan over medium heat. Add the sesame crusted blue cod fillets and sear until golden and cooked through, about 4-5 minutes on each side.
  • Cook soba noodles per package instructions, drain, and set aside.
  • In the same pan, add a teaspoon of vegetable oil and cook the wonton wrappers until crispy, then set aside.
  • Toss the cooked soba noodles with the edamame, snow peas, and carrot ribbons.
  • In a separate bowl, whisk together soy sauce, miso, vegetable oil, mirin, minced ginger, minced garlic, light brown sugar, and honey to make the sauce.
  • Combine the noodle mixture with the sauce, and serve topped with the sesame crusted blue cod and crispy wontons.

Notes

Feel free to add your favorite vegetables to the noodle bowl for extra crunch and nutrition.
