Ingredients
  

For the Salmon Balls

  • 1 lb fresh salmon, cooked and flaked
  • ½ cup almond flour (or gluten-free breadcrumbs)
  • 2 pcs eggs
  • 2 tablespoon chopped fresh parsley
  • 2 pcs green onions, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil spray (for baking)

For the Creamy Avocado Sauce

  • 1 pc ripe avocado
  • ¼ cup Greek yogurt (or dairy-free yogurt)
  • 2 tablespoon lime juice (freshly squeezed)
  • 1 clove garlic
  • 2 tablespoon fresh cilantro or parsley
  • Salt to taste
  • 2–3 tablespoon water (to thin the sauce as needed)

Instructions
 

Steps to Prepare Salmon Balls

  • Preheat your oven to 375°F (190°C). Bake the salmon for 15–20 minutes, or until it flakes easily with a fork. Once cooled, flake the salmon with a fork and set aside.
  • In a large mixing bowl, combine the flaked salmon, almond flour, eggs, chopped parsley, green onions, minced garlic, Dijon mustard, smoked paprika, salt, and pepper. Mix everything gently until it holds together nicely.
  • Scoop about 1 ½ tablespoons of the mixture and roll into balls. You should get around 14–16 bite-sized salmon balls. Place them on a parchment-lined baking sheet and lightly spray with olive oil.
  • Bake the salmon balls in the oven at 400°F (200°C) for 18–20 minutes, flipping halfway through until golden and firm.
  • While baking, blend all the avocado sauce ingredients in a food processor until smooth. Adjust the consistency with water as needed.
  • Serve the warm salmon balls with a drizzle of creamy avocado sauce or serve on the side for dipping.
