Ingredients
  

Cinnamon Roll Dough

  • 1 packet quick rise yeast or 2 ¼ teaspoons
  • cup sugar divided
  • ¼ cup warm water 110-115°F
  • cup very warm milk
  • cup mashed potatoes
  • ¼ cup butter
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 3 ½ cups all-purpose flour

Peach Filling

  • ¾ cup sugar
  • 6 tablespoons butter melted
  • 1 tablespoon flour plus 1 teaspoon
  • 1 tablespoon ground cinnamon
  • 2 cups diced peaches patted dry

Crumb Topping

  • cup butter softened
  • cup brown sugar
  • cup flour

Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla

Instructions
 

Make the Dough

  • In a small bowl, add the yeast and 2 teaspoon sugar to the water. Give it a stir and set aside.
  • In the bowl of a stand mixer fitted with the dough attachment, add the warm milk, ⅓ c sugar, mashed potatoes, butter, egg yolk, salt and vanilla. Stir until the butter is melted.
  • Add 1 cup of the flour and stir to combine.
  • Pour in the yeast mixture and stir.
  • Add the remaining flour. Knead the dough until slightly sticky.
  • Gather the dough into a ball and place into a greased glass bowl. Cover and set in a warm place to rise.

Make the Filling

  • Combine the sugar, melted butter, flour and cinnamon. Gently stir in the diced peaches.

Fill and Shape the Rolls

  • Once the dough has doubled, punch it down and lay it on a greased countertop. Roll into a large rectangle.
  • Dollop the peach mixture over the dough and spread.
  • Roll the dough up.
  • Cut the dough into 12 pieces.
  • Place the rolls into a greased 9x13" pan.

Make the Crumb Topping

  • Combine the softened butter, brown sugar and flour until a crumb mixture forms.
  • Sprinkle this over the cinnamon rolls.
  • Cover and let rise in a warm place.

Bake the Cinnamon Rolls and Frost

  • Preheat oven to 350°.
  • Bake the rolls for 18-22 minutes until golden brown.
  • Stir together the icing ingredients and drizzle over the rolls.
