Ingredients
  

  • 5 thigh fillets bone in chicken skin removed
  • 1 piece onion chopped
  • 2 cloves garlic minced
  • 2 tablespoon butter or olive oil
  • 1.5 cups uncooked white rice
  • 1.5 cups chicken broth/stock hot
  • 1.25 cups water hot

Chicken Rub

  • 1 teaspoon paprika powder
  • 1 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.75 teaspoon salt
  • to taste black pepper

Optional garnish

  • oil spray
  • fresh thyme leaves or finely chopped parsley

Instructions
 

  • Preheat oven to 180°C/350°F.
  • Scatter onion and garlic in a baking dish, then place butter in the centre. Bake for 15 minutes.
  • Mix together Chicken Rub and sprinkle on both sides of the chicken.
  • Remove baking dish from the oven. Add rice then mix.
  • Place chicken on rice, then pour chicken broth and water around the chicken.
  • Cover with foil, then bake for 30 minutes. Remove foil, spray chicken with oil, then bake for a further 20 minutes.
  • Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!

Notes

Bone in thighs are best because cook time is the same as rice and they stay super juicy. Skin must be removed to avoid greasy rice. Drumsticks also work well without skin removal. Cook time remains unchanged.
