Ingredients
  

  • 1 block parmesan or cheddar cheese, shredded 8-ounce
  • 2 small white onions, sliced ⅛-inch thick rounds
  • 1 spray avocado oil cooking spray
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ranch dip for serving

Instructions
 

  • Preheat the oven to 400℉ and line a large rimmed baking sheet with parchment paper.
  • Spread the grated cheese on the bottom of the baking dish in a thin even layer.
  • Add the onion slices on top of the cheese so they are touching but not overlapping.
  • Spray the top of the onion rings with cooking oil spray. In a small bowl, combine the paprika, garlic powder, salt and pepper. Sprinkle on top of the onions.
  • Bake until crispy and golden brown, about 20 minutes. Allow to cool for 5-10 minutes and then break apart to serve with ranch or your favorite dip.

Notes

Slice the onion chips into individual rings and store them in an airtight container in the fridge. They will stay crisp but soften slightly so you can reheat them in the oven at 350F for 5 minutes or in a toaster oven if you have one.
