Bacon Base
- 4 oz. thick-cut bacon cut into ¼" pieces
- 2 scallions white and green parts separated, thinly sliced
- 4 oz. cream cheese softened
- ¾ cup shredded cheddar
- ¼ cup sliced almonds
- 2 Tbsp. mayonnaise
- ½ tsp. kosher salt
- ½ tsp. freshly ground black pepper
Preparation
In a cold, large, ovenproof or cast-iron skillet, arrange bacon in a single layer. Cook over medium heat, stirring occasionally, until crispy, about 10 minutes. Transfer bacon to a paper-towel-lined plate to drain.
In a serving bowl, mix bacon, white scallion parts, cream cheese, cheddar, almonds, mayonnaise, salt, and pepper until combined.
Top with green scallion parts. Serve cold or at room temperature with crackers alongside.
