Baking Instructions

  • Preheat the oven to 350 degrees F. Spray 5 mini loaf pans or 1 large loaf pan with nonstick cooking spray, and have a muffin tin ready for excess batter.
  • In a stand mixer bowl, beat melted butter, sugar, and maple syrup together until light and fluffy.
  • In a small bowl, whisk together the eggs and pumpkin puree. Add the mixture to the butter mixture, beating until incorporated.
  • Sift together flour, baking powder, baking soda, salt, and spices in a separate bowl. Add dry ingredients to the batter and blend until just incorporated.
  • Divide the batter among the prepared pans and level the tops with an offset spatula. Bake until done.
  • Bake until the center springs back when pressed, about 45 minutes for mini loaves or 55–60 minutes for one large loaf; 25 minutes for muffins.
  • Melt butter in a small saucepan over low heat, then whisk in maple syrup and powdered sugar to make a glaze.
  • Melt the chocolate with spices in a microwave or double boiler for the chocolate drizzle.
  • Remove the bread from the pan(s), drizzle the glaze(s) over the top, and garnish with maple leaf candy if desired.
