Ingredients
  

  • ¾ cup sugar
  • 1 cup fresh pumpkin puree
  • ½ cup vegetable or coconut oil
  • ½ cup water
  • 2 large eggs
  • 1 ¾ cups flour
  • 1 teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground clove
  • ½ cup optional chocolate chips or nuts can substitute with raisins or walnuts

Instructions
 

  • Heat oven to 350F.
  • In a mixing bowl mix sugar, pumpkin puree, oil, water, and eggs.
  • In a different mixing bowl mix flour, baking soda, cinnamon, salt, baking powder, nutmeg and clove.
  • Combine dry ingredients with the wet ingredients.
  • Add chocolate chips or other add-ins you'd like and mix them in.
  • Add batter to an oiled loaf pan and bake for 65-70 minutes or until the center is set.
  • Enjoy!

Notes

If you'd like even less sugar, you can add ½ cup instead of ¾ of a cup. This bread keeps well at room temperature or in the fridge and freezes very well.
