Ingredients
  

  • 1 lb honey garlic sausage cut into bite-sized pieces
  • 2 large sweet potatoes diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss until evenly coated.
  • Spread sweet potatoes in a single layer on the prepared baking sheet. Add sausage pieces to the sheet, mixing them with the sweet potatoes.
  • Roast for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned.
  • Garnish with fresh parsley if desired and serve warm.

Notes

Cut sweet potatoes into uniform sizes for even cooking. Don’t overcrowd the baking sheet to ensure proper roasting. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For extra crispiness, broil for the last 2-3 minutes of cooking.
