Ingredients
  

For the pie

  • 3 pounds cooking apples such as Granny Smith, Jonagold, Golden Delicious, Fuji, or Braeburn
  • 1 tablespoon lemon juice or apple cider vinegar
  • ½ to ⅔ cup sugar depending on sweetness preference
  • 3 tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon brandy optional, use Calvados if available
  • 1 teaspoon vanilla extract
  • 1 double crust sour cream pie dough or all-butter crust or your favorite pie crust recipe

For the egg wash

  • 1 large egg yolk
  • 1 tablespoon cream

Method

  • Peel, core, and slice the apples. Toss with lemon juice or apple cider vinegar to prevent browning.
  • Combine sugar, flour, and spices in a bowl, then add to apple slices and mix well.
  • Preheat the oven to 375°F.
  • Roll out the dough and line the pie plate with the rolled dough.
  • Arrange the apple slices in the dough-lined pie plate.
  • Roll out the top crust, place it over the apples, trim, and crimp the edges.
  • Brush with egg wash and cut vents in the top crust.
  • Bake for 20 minutes at 375°F, then reduce heat to 350°F. Bake for an additional hour or more until golden brown.
  • Cool the pie for at least 1 hour before serving.

Notes

Great with a side of vanilla ice cream.
