Ingredients
  

Cucumber and Yogurt

  • 1 whole English Cucumber peeled
  • 1.5 cups Whole Milk Greek Yogurt unsweetened and unflavored

Flavorings

  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 cloves Fresh Garlic peeled and minced finely
  • 1 teaspoon Kosher Salt
  • 0.25 teaspoon Black Pepper
  • 0.33 cups Fresh Dill or fresh mint

Preparation

  • Using the large holes of a box grater, grate the cucumber. Transfer it into a fine-mesh strainer and strain all of its juices, pressing it with a rubber spatula. Set aside.
  • In a medium-size mixing bowl, whisk together yogurt, lemon juice, minced garlic, salt and pepper.
  • Using a spatula, fold in the cucumber and dill. Transfer to a bowl.
  • If you have time, cover with plastic, and let it sit in the fridge for a few hours before serving.

Notes

This recipe makes about 1 ¼ to 1 ½ cups of tzatziki sauce, ideal for 4 servings. It can be made up to 2 days ahead. Store in an airtight container. This sauce stays fresh for about 3-4 days.
