Ingredients
  

  • 1 cup granulated sugar
  • 1 cup unsalted butter melted
  • 3 large eggs room temperature
  • 2.5 teaspoons vanilla extract
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • cup sour cream
  • 2 tablespoons granulated sugar for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  • In a large bowl, mix sugar and melted butter for about 1 minute until light and airy.
  • Add eggs one at a time, then vanilla, mixing well after each.
  • In a separate bowl, sift cake flour, baking powder, and salt. Gradually add to wet ingredients; mix until just combined.
  • Gently fold in sour cream.
  • Pour batter into baking dish and sprinkle top with 2 tablespoons sugar.
  • Bake 30–35 minutes, or until a toothpick comes out clean.
  • Let cool slightly before slicing and serving.

Notes

For extra flavor, fold in berries or a pinch of cinnamon. Top with powdered sugar or a light glaze for a pretty finish. Store at room temp for 3 days or refrigerate up to 1 week. Reheat in the microwave or oven to refresh texture. Can be frozen for up to 2 months (wrap tightly).
