Ingredients
  

Meat

  • 0.5 lb fresh chorizo

Canned Ingredients

  • 1 can (10 oz) diced tomatoes with green chiles such as Rotel

Cheeses

  • 1 pkg (8 oz) cream cheese cubed
  • 8 oz processed cheese such as Velveeta, cubed

Toppings

  • chopped fresh tomatoes
  • chopped fresh cilantro

Serving Snacks

  • tortilla chips, corn chips, or pretzels for serving

Instructions
 

Cooking Instructions

  • Heat a 10-inch cast iron skillet over medium-high. Add chorizo and cook, stirring often to crumble chorizo, until browned and cooked through, 5 to 6 minutes. Tilt skillet to drain drippings to one side; spoon off and discard drippings.
  • Stir in diced tomatoes with green chiles, cream cheese, and processed cheese and cook over medium, stirring constantly, until melted and heated through, 4 to 5 minutes.
  • Top with tomatoes and cilantro. Serve warm with tortilla chips, corn chips, or pretzels.

Notes
