Ingredients
  

  • 1 cup basmati rice uncooked
  • 2 tablespoon minced dried onion
  • 1 teaspoon minced dried garlic
  • 2.5 teaspoon chili powder
  • 1.5 teaspoon ground cumin
  • 0.5 teaspoon mexican oregano or regular oregano
  • 1.5 teaspoon paprika
  • 2 teaspoon salt
  • 15 ounce can of corn
  • 15 ounce can of black beans
  • 4 cups shredded cooked chicken
  • 3.5 cup chicken broth
  • 7 ounce can of green chilies
  • 1.5 cup shredded cheese

Instructions
 

  • Preheat the oven to 400°F.
  • In a 9×13 baking dish, add the uncooked rice and fajita seasoning, then stir to combine.
  • Pour in the chicken broth and green chiles, mixing well.
  • Add the cooked shredded chicken, black beans, and corn, stirring to distribute evenly.
  • Cover the casserole dish with aluminum foil and transfer it to the oven.
  • Bake for 30 minutes, then check if the rice is done. If needed, cook for up to 15 minutes more.
  • Once done, remove from the oven, sprinkle with cheese, and return to the oven for the final 5-10 minutes until melted and golden brown.
  • Let the casserole cool for 5-10 minutes, then serve with fresh cilantro, chopped green onion, salsa, pico de gallo, and favorite toppings like sour cream, avocado, or black olives, if desired.

Notes

Rice can go from perfectly tender to mushy if overcooked. Start checking at 30 minutes by using a fork to taste test a small portion.
