Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • 0.25 teaspoon fine sea salt
  • 0.75 teaspoon ground cinnamon

Wet Ingredients

  • 3 medium bananas very ripe bananas are best
  • 8 tablespoons butter melted and cooled
  • ¾ cup light brown sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup walnuts toasted and chopped (optional)

Preparation

  • Preheat the oven to 350°F (176°C) and grease and flour an 8 ½” x 4 ½” loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a large bowl, mash the bananas, then whisk in the melted butter, brown sugar, eggs, and vanilla.
  • Add the dry ingredients to the wet ingredients in two parts and stir until smooth. If using nuts, fold them in now.
  • Pour the batter into the prepared pan and smooth the top. Bake for 55 to 65 minutes or until a knife comes out clean.
  • Cool in the loaf pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Homemade banana bread lasts in an airtight container for up to 3 days at room temperature or 1 week in the fridge. To freeze, wrap in plastic and foil for up to 6 months.
