Ingredients
  

Rice & Liquids

  • 2 cups brown rice medley wild or mixed rice works
  • 3.5 cups veggie broth or water for cooking rice
  • 1 cup white cooking wine can substitute with vegetable broth

Vegetables & Seasonings

  • 1 cup chopped sweet or yellow onion
  • 3 cloves garlic finely chopped
  • 0.25 cup finely chopped celery
  • 0.5 cups oil or use broth for oil-free cooking
  • 0.25 cup finely chopped parsley
  • 0.75 teaspoon sea salt adjust for preference
  • 0.25 teaspoon ground black pepper

Nuts & Dried Fruit

  • 1 cup pine nuts can substitute with walnuts
  • 6 tablespoons seedless currants
  • 0.25 cup slivered almonds

Instructions
 

Preparation Steps

  • Preheat oven to 350°F/180°C.
  • Soak the currants in the wine or veggie broth.
  • Partially cook the rice in veggie broth or water for about ⅔ of the cooking time.
  • Sauté onions, garlic, and celery in a pan over medium heat until browned.
  • Add parsley, salt, and pepper; sauté for a few more minutes.
  • Add currants with the wine/veggie broth, pine nuts, and almonds. Simmer for a few minutes.
  • Fold in the rice and simmer, adding more veggie broth if too dry.
  • Serve as is or transfer to a baking dish and cover with foil, baking for 5-10 minutes.

This rice stuffing works well as a side dish or a main meal, especially during the festive season.
