Ingredients
  

  • 3 cups sweet potato cut into ½-inch chunks
  • 2 tablespoons olive oil
  • ¾ tablespoon chipotle pepper powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ground pepper to taste

Instructions
 

  • Preheat oven to 400 degrees F
  • Chop sweet potatoes into ½-inch chunks
  • Toss sweet potatoes with olive oil in a bowl until well coated
  • Stir in all of the spices and mix until potato chunks are well spiced and coated with the oil and spices
  • Arrange the potato chunks evenly on a lined sheet pan
  • Bake for 15 minutes until edges are crispy and centers are soft (test with a fork)
  • Serve as a side dish or in a healthy grain bowl or vegan taco

Notes

Smoked paprika can be substituted for chipotle powder 1:1. For air fryer option, preheat air fryer to 380 degrees F and set for 10 minutes, shaking halfway through.
