Ingredients
  

Poultry

  • 2 to 2 ½ pounds chicken pieces, preferably thighs and drumsticks skin-on and bone-in recommended
  • to taste Kosher salt
  • 2 to 3 tablespoons unsalted butter

Vegetables

  • 2 pounds yellow onions (about 2 to 3 large onions)

Spices

  • to taste freshly ground black pepper
  • 2 tablespoons sweet paprika, preferably Hungarian
  • 1 teaspoon hot paprika or cayenne or to taste

Liquids

  • 1 cup chicken broth
  • ½ cup sour cream

Instructions
 

Preparation

  • Salt the chicken pieces by sprinkling them well with salt and set aside at room temperature.
  • Slice the onions lengthwise (top to root).
  • Brown the chicken pieces in a large sauté pan over medium-high heat with melted butter. Cook 4 to 5 minutes on one side until browned, then turn and cook 2 to 3 additional minutes. Remove and set aside.
  • Sauté the onions in the same pan, stirring and scraping up browned bits, until lightly browned, about 7 minutes.
  • Add paprika and black pepper to the onions, stirring to combine and letting it cook for a minute.
  • Add chicken broth, scraping the browned bits, then nestle the chicken pieces into the onions, cover, and cook on low heat for 20 to 25 minutes.
  • Remove chicken when cooked through, stir in sour cream and adjust seasoning with salt. If needed, warm it slightly before coating the chicken.
  • Serve with dumplings, rice, egg noodles, or potatoes according to preference.
