Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • cup liquid (water, broth or milk) add milk for creaminess
  • 2 tablespoons butter
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ cups chopped broccoli
  • 1 cup shredded cheddar cheese

Instructions
 

  • Heat olive oil in a medium size saucepan over medium heat, add chopped onion and minced garlic and sauté for 2 minutes, stirring occasionally.
  • In the same saucepan, add the chicken broth and bring to a boil.
  • Add the jasmine rice, cover and reduce temperature to low, stirring occasionally. After the rice has simmered on low for 12 minutes remove cover and stir well.
  • Add in two tablespoons butter, ⅓ cup water, salt and pepper, cover and let simmer for 3 more minutes.
  • After 3 minutes, stir in broccoli. Continue to let the rice cook on low for 4-5 minutes or until your broccoli is the desired tenderness.
  • Stir in cheese and serve.

Notes

This recipe is great for picky eaters and is gluten-free.
