Ingredients
  

  • 3 pieces small leeks, trimmed and washed
  • 25 g butter
  • 2 cloves garlic, thinly sliced
  • 2 sprigs fresh thyme
  • 2 leaves fresh bay leaves see tip
  • 1 cup chicken stock
  • finely chopped fresh flat-leaf parsley leaves, to serve

Instructions
 

  • Remove outer leaves from leeks. Cut leeks into 5cm pieces. Melt butter in a saucepan over medium heat. Add garlic, thyme, and bay leaves. Cook, stirring, for 1 minute or until fragrant.
  • Add leek and stock. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 25 minutes or until leeks are almost tender. Simmer, uncovered, for 10 minutes or until liquid has reduced. Season with pepper. Top with parsley. Serve.
