Ingredients
  

Banana Gingerbread

  • 2 cups all-purpose flour spooned into cup and leveled off
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 0.75 cup mashed bananas from about 2 to 3 small ripe bananas
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.5 cup fancy molasses
  • 0.5 cup brown sugar packed

Glaze

  • 0.5 cup icing sugar
  • 1 tablespoon orange juice

Optional Garnish

  • grated orange zest
  • chopped candied ginger

Instructions
 

Banana Gingerbread

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray a 9-inch x 5-inch loaf pan with baking spray or grease with butter, then line with parchment paper. Spray the parchment paper with baking spray or grease with butter.
  • In a bowl, whisk together the all-purpose flour, baking soda, salt, ginger, cinnamon, cloves and nutmeg.
  • In another bowl, mash the bananas until smooth.
  • To mashed banana, add eggs, oil, molasses and sugar. Whisk together to combine.
  • Slowly add the flour mixture to the banana mixture, stirring to combine. Don't overmix, but don't leave any dry flour behind.
  • Pour loaf mixture into the prepared pan and bake for 45 to 53 minutes or until a wooden skewer inserted in the centre comes out clean.
  • Once baked, allow the banana gingerbread to cool for 10 minutes in the pan, then remove from the pan and cool fully on a cooling rack.

Glaze

  • Once the banana gingerbread is cool, add icing sugar to a bowl and slowly whisk in orange juice until smooth.
  • Drizzle the glaze over the banana gingerbread and garnish with orange zest and candied ginger if desired.
  • Slice and serve. Enjoy!

Notes

Wait until your banana gingerbread is completely cool before glazing. The glaze can be adjusted for thickness.
