Ingredients
  

  • 6 fillets cod about 4 oz each
  • 1 teaspoon garlic powder or 2 teaspoons minced garlic cloves
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried parsley or Italian seasoning
  • ¼ teaspoon onion powder
  • 2 tablespoons melted butter
  • 2 teaspoons fresh lemon juice
  • lemon wedges for serving

Instructions
 

  • Preheat the oven to 400°F. Lightly grease a baking pan or line it with parchment paper for easy cleanup.
  • Pat the cod fillets dry with a paper towel. This helps the seasoning stick.
  • In a small bowl, mix together the garlic powder, paprika, salt, pepper, parsley, and onion powder.
  • Brush the fillets with melted butter and drizzle with lemon juice. Sprinkle the seasoning mixture evenly over the fillets.
  • Place the fillets in the baking dish and bake for 8-10 minutes, or until the fish flakes easily with a fork.
  • Serve immediately with lemon wedges and fresh herbs such as parsley.

Notes

For a crispier topping, sprinkle with panko breadcrumbs and shredded parmesan cheese. Store leftovers in an airtight container in the fridge for up to 3 days.
